Recovery-Focused Dishes by Performance Kitchen Consulting

Example menu option:  Targeting post game recovery with leucine-rich protein sources

Working with Dieticians, we identify foods rich in carbohydrates for glycogen refueling, and hydration rich foods to support post-game repair.

Menus are developed for athletes and teams seeking evidence-based, practical recovery meals prepared from locally sourced ingredients when available.

Bourbon Chicken & Rice Bowl

Roasted chicken thigh over jasmine rice with a side of steamed vegetables and a small Greek yogurt dressing.

Target macronutrients: approximately 35 to 40 grams protein, 60 to 75 grams carbohydrates, and 10 to 15 grams fat depending on portioning.

Rationale: chicken provides a high leucine content to trigger muscle protein synthesis while rice replenishes muscle glycogen.

Probiotic Yogurt Parfait with Carb Blend

Greek yogurt layered with cooked rice, diced seasonal fruit, and a sprinkle of seeds for texture.

Target macronutrients: approximately 25 to 30 grams protein, 50 to 65 grams carbohydrates, and 8 to 12 grams fat.

Rationale: plain Greek yogurt supplies concentrated leucine and probiotics for gut support; rice adds easily digestible carbohydrates for rapid refueling.

Pomegranate Roasted Salmon & Greens Bowl

Pan-seared wild salmon fillet, sautéed kale and baby spinach, served with a side of tri-color quinoa.

Target macronutrients: Approximately 38 to 42 grams of protein, 45 to 55 grams of carbohydrates, and 14 to 18 grams of healthy fats.

Rationale: Salmon provides high-quality protein and anti-inflammatory Omega-3 fatty acids to aid in muscle cell repair and reduce joint soreness, while the complex carbohydrates in quinoa restore depleted glycogen stores. Leafy greens deliver essential micronutrients and antioxidants to combat training-induced oxidative stress.

Creamy Beef & Veggie Penne Pasta

Grass-fed beef sautéed with broccoli, mushrooms, and
sun-dried tomatoes, tossed in a cottage cheese based cream sauce over penne pasta.

Target macronutrients: Approximately 40 to 45 grams of protein, 65 to 75 grams of carbohydrates, and 12 to 16 grams of fat.

Rationale: Beef provides high-quality protein and leucine to stimulate muscle protein synthesis after hard training. Pasta replenishes depleted muscle glycogen stores efficiently, while broccoli and mushrooms deliver essential vitamins, minerals, and dietary fiber to aid overall recovery and immune health.

Performance-driven meal plans

Performance Kitchen Consulting builds fully customizable daily and weekly menus designed for teams. We create plans that address pre-game fueling, in-season carb strategies, post-game recovery, and targeted hydration. Menus are built around the athlete’s sport, position, training load, travel schedule, and individual dietary restrictions. Each plan includes clear timing guidance for optimal performance and recovery, plus options for plant and animal proteins so you can meet macronutrient and preference goals without sacrificing convenience or taste.

How Our Weekly Plans Work

We begin with a sport-specific assessment: training volume, competition schedule, and any medical or dietary restrictions.

We then design a daily template that aligns with practice intensity and game day demands.

Plans can include breakfast, pre-practice snacks, post-practice recovery meals, dinner, all day menu ordering options, and
travel specific meals.

Clients can receive portion guidance, macronutrient targets,
and meal timing recommendations that coordinate with
training sessions.

We offer iterative revisions after the first week to fine tune digestibility, energy, and compliance.

Pre-Game Fueling

Pre-game strategies are individualized by sport and event type.

On game day, plans provide a pre-game meal window with low-fiber, moderate-protein and easily digested carbohydrate options along with a 60–90 minute small snack guideline for last-minute top-ups.

Sample options are included for both plant-forward athletes (quinoa bowl with roasted vegetables and tempeh, banana and rice cakes) and animal-protein athletes (grilled chicken with white rice and steamed carrots, turkey sandwich on low-fiber bread).

Post-Game Recovery and Hydration

Post-exercise recovery plans prioritize rapid glycogen replenishment and muscle repair.

Each recovery meal recommendation includes a practical carbohydrate-to-protein approach and timing cues to
maximize adaptation and reduce soreness.

Hydration protocols are included through food sources like salted potatoes, berries and melons, and broths when appropriate.

Recovery menus also include next-day strategies to restore energy stores.

Customization for Performance Goals

Plans are fully adaptable for allergies, intolerances, vegan and vegetarian preferences, religious requirements, and gluten- or dairy-free needs.

We can provide equivalent swap suggestions so the athlete maintains targeted macronutrients and meal timing without losing performance benefits.

Ongoing monitoring and communication with dieticians and human performance staff is available to adjust intake for changing training loads, and recovery priorities.
